Recipe: how to cook Chinese noodles, Zha Jiang Mian

Zha Jiang Mian is a common homemade main course in China, Cool noodles with soybean paste. Different regions use various ingredients. People in Beijing use soybean paste, Liu Bi Ju brand paste is famous and has a long history. While people in Tianjin use sweet soybean paste. The following cooking way is Beijing style.

INGREDIENTS:

  • noodles
  • soybean paste
  • pork (streaky pork) You could use beef, chicken or egg. More easy way, you could choose mince instead.
  • cucumber/red radish/celery/bean sprout/Chinese cabbage/soybean/ any vegetables you prefer
  • ginger
  • spring onion

INSTRUCTIONS:

Step 1: prepare ingredients and cut as the following images.

noodles and pork

Step 2: mix the paste with some temperature water.

Step 3: add some oil in the preheated wok. put the ginger until ginger smell comes out.

Step 4: stir-fry diced pork.

Step 5: add the spring onion and keep stirring.

Step 6: pick the ginger out.

Step 7: after the pork fat oil comes out, add the paste. keep heating and stirring until it is boiled. Transfer to a container.

if you like a thick paste, turn down the heat, boil it longer. but make sure it is not burnt

Step 8: put celery, soybean and other vegetables in boiling water for a while. cook the noodles. run the vegetables and noodles under cool water.

Step 9: decorate the noodles with vegetables and add some paste. Done❕

you could mix some vinegar and garlic. Enjoy~
