Recipe: how to cook Chinese food, Tea Egg
Tea Egg is a traditional Chinese snack. As it is easy to cook and take, it is usually sold at bus or train stations, streets, convenience stores and so on. The price is very low, around 1.5 RMB. People have it for breakfast sometimes.
INGREDIENTS:
- 10 eggs
- 2 star anises
- 2g dried myrcia
- 1g cinnamon
- 2g fennel
- 30g sugar
- 20g salt
- 25g soy sauce
- 15g dark soy sauce
- 600g water
- 5g black tea
Step 1: put clean eggs in cool water, turn on the heat to the high level. turn off the heat after the water is boiling. cover the lid for 5 minutes.
Step 2: crack eggs (after step 1 you could put eggs in cool water, so the peel wouldn’t stick with the egg white)
Step 3: put all seasonings in cool water and boil over high heat. after it is boiling, turn to low heat and boil for 3 minutes. then put eggs in the wok and turn to high heat. after boiling, turn to low heat, poach for one hour. the longer poaching, the stronger flavour.
Step 4: turn off heat. soak the eggs overnight. DONE❕
If you want to have special patterns on the eggs
you just need to change the step 2: peel the eggs. put leaves on eggs and wrap with gauzes, then tie with cotton strings.
