Scrambled Eggs with Tomato is a common dish in China. As it is easy and quick to learn and prepare, it is the first dish to learn for most people in China. It also has balanced nutrition.

INGREDIENTS

  • 3 eggs
  • 4–5 tomatoes
  • 3 tablespoons vegetable oil
  • salt
  • spring onion (optional)

INSTRUCTIONS:

Step 1: whisk eggs well

Step 2: dice the tomatoes

Step 3: heat 2 tablespoons oil to medium-high, add eggs and stir-fried until it is soft as an omelette. Don’t smash it into small pieces. Put into a plate and set aside.

Step 4: heat 1 tablespoons oil to medium-high, add tomatoes and fried, reduce heat to medium, wait the tomatoes turn soft and juicy.

Step 5: smash the tomatoes. If you like to eat the diced tomato, please skip this step.

Step 6: mix eggs with tomatoes, add some salt and mix well.

Step 7: put some spring onion, stir 15 seconds. Done.
