Recipe: how to cook Chinese food, Youtiao_churro_cruller

Youtiao is an ancient Chinese pasta, which is one of traditional Chinese breakfast. Its history can be tracked to Tang Dynasty. People often have it with soy milk or douhua. It is also used to make the Jian Bing Guo Zi (Savory Chinese Crepes).

INGREDIENTS:

  • 400g flour
  • 4g yeast
  • 1 egg
  • 200ml warm water
  • 20g sugar
  • 20ml cooking oil
  • 4g baking soda
  • 4g salt

INSTRUCTIONS:

Step 1: mix the yeast with 160ml water totally. stay aside.

Step 2: stir flour, sugar, oil and egg evenly with chopsticks.

Step 3: pour step 1 mixture.

Step 4: knead into a smooth dough. cover it and stay for 2 hours to double size in a warm place.

Step 5: melt salt and baking soda in 40ml warm water.

Step 6: knead step 5 in Step 4 several times.

Step 7: knead to smooth soft dough, cover and make it twice as big.

Step 8: brush oil on the chopping board. knead the dough. the dough will be soft after absorbing the oil. relax it for a while. roll the dough into 0.5cm thick rectangular with a rolling pin.

Step 9: cut into strips about 2cm wide.

Step 10: stack strips in pairs, press with a chopstick in the middle. slightly stretch it a little bit longer. pinch both ends. then stay it for 20 minutes.

Step 11: heat oil over high heat to around 400℃, twist the youtiao slightly and put into oil one by one. keep rolling it.

Step 12: fry to the golden colour surface. DONE❕
