Recipe: how to cook Chinese food, Rou Jia Mo_Chinese burger_rougamo

Rou Jia Mo is one of traditional food in Shannxi. The history can be traced back to the Warring States Period. In January 2016, it was selected into the 5th batch of Intangible Cultural Heritage in Shaanxi. Rou Jia Mo is a famous snack. The Tongguan(county) Rou Jia Mo is best known.

Tongguan Rou Jia Mo

INGREDIENTS:

Rolls:

  • 600g flour
  • 1 teaspoon salt
  • cooking oil
  • 2 teaspoon baking soda
  • lard oil

Stuffing:

  • 750g pork belly
  • 3–4 spoon sugar
  • 100g soy sauce
  • 1 cinnamon
  • 6–10 dried chilli pepper
  • 5 bay leaf
  • 3 star anise
  • 2 amomum tsao-ko
  • 10 Sichuan pepper

INSTRUCTIONS:

Step 1: mix flour, salt, cooking oil and baking soda with water. knead into a dough and cover with cling wrap for 30 minutes.

Step 2: melt sugar in hot cooking oil. add water after the sugar changes to amber colour and there are lots of bubbles.

Step 3: put all spices.

Step 4: add soy sauce. put pork belly. turn to low heat after boiling.

Step 5: roll the dough. repeat to brush lard several times.

Step 6: stretch and roll to the middle. cut the half part into strips.

Step 7: stretch and roll.

Step 8: divide into 6 dough.

Step 9: turn it up and press. roll it with a rolling pin.

Step 10: brush lard oil on the pan, pan-fry over medium-low heat until it turns to slight golden colour both sides.

Step 11: preheat the oven, bake up and down in 200℃ for 8 minutes.

Step 12: simmer the meat until the oil is thick and sticky.

Step 13: sprinkle some juice on the meat when chopping. you could add some spring onion or coriander.

Step 14: cut the roll in the middle, and put the stuffing. DONE❕
