Recipe: how to cook Chinese food, Three Cups Chicken

Three Cups Chicken is a famous traditional dish in Jiangxi Province and it is said that it is related to the national hero Wen Tianxiang. It is named Three Cups Chicken because it is cooked without water, only put 1 rice cooking wine: 1 soy sauce: 1 black sesame oil. It has strong and fragrance smell, fresh sweet and salty flavour, tender and chewy taste. Three Cups Chicken originated in Jiangxi Province and later spread to Taiwan, becoming a representative dish of Taiwanese cuisine.

INGREDIENTS:

  • 4 chicken leg or chicken drumstick
  • 8 slice ginger
  • 8 clove garlic
  • 1 spring onion
  • 3 red chilli pepper
  • 8 small red onion
  • 2.5 spoon rock sugar
  • 3 spoon soy sauce
  • 3 spoon black sesame oil
  • 3 spoon rice cooking wine
  • ½ spoon dark soy sauce
  • Salt
  • basil

INSTRUCTIONS:

Step 1: prepare ingredients.

Step 2: cut chicken drumsticks. heat 2ml spoon oil to 200℃, put spring onion and ginger. when the aroma comes out, put chicken drumsticks. stir-fry until the water comes out from drumsticks and dry. the chicken turns to golden colour.

Step 3: add soy sauce, rock sugar, dark soy sauce, black sesame oil, 2 spoon cooking wine, salt and chilli pepper. turn off the heat after it is boiling again. (you could cook it in a clay pot from this step)

Step 4: heat a clay pot. put 2ml oil, red onion and garlic.

Step 5: put the chicken and basil. heating over medium heat with lid covered. pour 1 spoon cooking wine around the lid. turn off after 2 minutes. DONE❕
