Recipe: how to cook Chinese food, Taro Ball Soup (dessert)
Taro Soup is a famous snack in the area around Fujian, it belongs to Fujian cuisine. It is also one of the popular snacks in Taiwan. The taro soup can be hot or cold, you could have it no matter in winter or summer.
INGREDIENTS:
Taro ball:
- 250g sweet potato
- 250g purple sweet potato
- 250g taro
- 400g tapioca flour
Sweet red bean:
- 500g red bean
- 50g rock sugar (adjust as your taste)
- 2L water
Glass jelly (optional):
- 50g glass jelly powder
- 150ml cold water
- 1.1L boiled water
INSTRUCTIONS:
Step 1: peel sweet potato, purple sweet potato and taro. cut into small pieces.
Step 2: steam sweet potato, purple sweet potato and taro.
Step 3: mash Step 2.
Step 4: mix with tapioca flour separately. make three doughs.
Step 5: cut into several small segments and cover with some flour.
Step 6: you could freeze the taro balls. no need to unfreeze before cooking.
Step 7: put the taro balls into boiling water. transfer the taro ball into the cool water immediately after the taro floating up. that can make the taro balls chewier.
Step 8: soak red bean for 3 hours.
Step 9: put the red bean into boiling water, boil over low heat and put some rock sugar.
Step 10: the sweet red bean.
Step 11: mix the jelly powder with cold water well.
Step 12: put step 11 into the 1.1L hot water and mix evenly. cool down, the put into the fridge.
Step 13: you could put the taro into brown sugar water or red bean soup. you also can have the taro balls with red bean, jelly, coconut milk, condensed milk, fruits or others you like.
