Recipe: how to cook Chinese food, Squirrel-Shaped Fish_sweet and sour fish_fried

Squirrel-Shaped Fish is one of the famous traditional Jiangsu Cuisines. It is named for its shape. The dish can be traced back to the Qing Dynasty. It usually uses the yellow croaker, common carp or other fishes. It is crispy outside and tender inside, sweet and sour, and bright in colour.

INGREDIENTS:

1 grass carp

Cooking wine and salt ( marinating)

Oil

Starch (coating)

Sauce:

  • 10g minced garlic
  • 100g Ketchup
  • 15g sugar
  • 8g soy sauce
  • 8g vinegar
  • 180g broth or water
  • Cooking wine
  • Starch and water

Spring onion, pine nut (optional, decoration)

INSTRUCTIONS:

Step 1: prepare ingredients.

Step 2: clean and cut fish.

Step 3: marinate in salt and cooking wine for 5 minutes.

Step 4: absorb the water. cut the fish into the diamond shape. do not cut off.

Step 5: coat with starch evenly and shake off the excess starch.

Step 6: heat oil and fry the fish.

Step 7: pour some hot oil on fish, make sure fry the fish evenly to slight golden colour. transfer out and drain the oil. if you like golden colour, you could fry it again.

Step 8: fry the fish head.

Step 9: put the fish on a plate.

Step 10: heat oil, put minced garlic and stir-fry, add ketchup and sugar.

Step 11: add broth, soy sauce, cooking wine and vinegar. mix starch with water and add into the sauce after boiling.

Step 12: pour onto the fish. decorate with some pine nuts and shredded spring onion. DONE❕
