Recipe: how to cook Chinese food, Stewed Meatball
Stewed Meatball is a famous traditional dish in Jiangsu Province, belonging to Huaiyang cuisine. It is very popular.
The ingredients are basically the same with the braised meatball_Braised Pork Ball in Brown Sauce. And the prepare uncooked meatball process is the same as well.
INGREDIENTS:
- 300g pork belly
- 45g winter bamboo
- 450ml chicken stock
- 1 egg white
- 1 small ginger
- 1 spring onion
- 1 teaspoon sugar
- ¼ teaspoon salt
- 1 teaspoon cornstarch
- 1.5 teaspoon cooking wine
- ⅓ teaspoon white pepper powder
- 3 Chinese cabbage leaves
- several bok choy
- water
INSTRUCTIONS:
Step 1: prepare ingredients.
Step 2: wash the Chinese cabbage and cut. the natural curvature of the bottom of the cabbage is used to hold the meatball, so according to the size of your cooker, cut the length of the cabbage section.
Step 3: dice the winter bamboo.
Step 4: mince the ginger.
Step 5: mince the spring onion stalk.
Step 6: mix the minced ginger and spring onion stalk with 60ml water.
Step 7: dice the meat to pomegranate seed size.
Step 8: chop several more times to increase the stickiness. don’t chop too fine.
Step 9: mix evenly with salt, sugar, cooking wine, white pepper powder, egg white and cornstarch.
Step 10: mix with the winter bamboo. after the mince being sticky, put ginger, spring onion and water, stir in the same direction, absorb the water fully. The amount of onion ginger water is controlled according to the stickness of the meat (not pours all at once), until can grab a meatball.
Step 11: prepare hot water. boil the chicken stock.
Step 12: put the Chinese cabbage leaves on the bottom of the pot, then put the meatballs on them.
Step 13: cover the meatballs with Chinese cabbage leaves gently.
Step 14: pour the boiled chicken stock slowly, then pour the hot water over the meatballs.
Step 15: put two slices of ginger, turn to low heat to simmer for 2 hours after boiling over medium-high heat.
Step 16: after 2 hours, remove the foam and pick out the Chinese cabbage. add salt, boil bok choy for 1 minute.
Step 17: serve in a bowl. DONE❕
