Recipe: how to cook Chinese food, Shrimp Sauce (pickle)
Shrimp Sauce is a common sauce in coastal areas of China, Hong Kong and Southeast Asia, which ferment with salted shrimp. Good quality Shrimp Sauce is dusty purple colour and sticky, smell fresh without fishy, fine and smooth, moderate saline taste. It can be eaten directly or cooked with other ingredients, such as eggs, tofu, chicken wings, and other vegetables.
INGREDIENTS:
12 fresh baby shrimp: 1 salt
you could use shrimp or shrimp head, but you need to finely chop it or mash it with a food processor.
INSTRUCTIONS:
Step 1: pick out the impurities and other small fish or shell out. for keeping the fresh, you could not wash it.
if you want to wash it, you need to use a gauze to hold and wrap it.
Step 2: mix with salt evenly, keep in a clean and dry bottle.
Step 3: let it ferment. if you use baby shrimp, the period is around 7~10 days, the big shrimp need 20~30 days. DONE❕
