Recipe: how to cook Chinese food, Salted Duck Egg (pickle)

Salted Duck Egg is a Chinese speciality, which has a long history and is very popular among people. Best Salted Duck Egg is light olive colour eggshell and red yolk with oil. The most fat of duck egg is in the yolk, after salting, the water in the egg comes out and the fat in yolk concentrates and accumulates, so we can see the oil flow out from cooked duck egg yolk.

The traditional way is to wrap salted duck egg in red soil. But now homemade salted duck egg need baijiu and salt only. It can be served directly or cook with other food, such as pumpkin, chicken and so on.

INGREDIENTS:

  • 20 duck egg ( or chicken egg)
  • 70g baijiu
  • salt
  • cling wrap (optional)

INSTRUCTIONS:

Method 1:

Step 1: clean the egg. put eggs in the container, which you use to keep duck egg later. pour water, let the water over all eggs. you will use the water to prepare salt water.

Step 2: dry eggs and container, they must be without water and oil.

Step 3: roll the eggs in baijiu, make sure all eggs cover with baijiu.

Step 4: add salt in water until the water is bitter. (or until the salt cannot melt in the water)heat the water to boiling. then cool it in room temperature.

Step 5: put eggs in the container, pour baijiu, let baijiu over all eggs. pour the water after it is totally cool. seal the container and keep in a cool place for around 20 days. DONE❕

Method 2:

Step 1: wash eggs and dry.

Step 2: roll eggs in baijiu.

Step 3: roll eggs in salt, let salt cover the whole egg.

Step 4: wrap eggs with cling wrap. (optional)

Step 5: put in a sealed container for 1 month.
