Recipe: how to cook Chinese food, Pork Skin Aspic_crystal jelly_collagen

Pork Skin Aspic is a cold dish, which is rich in collagen and popular in the north of China.

INGREDIENTS:

  • 1000g pork skin
  • 15ml cooking wine
  • 3500g water
  • 3 pieces ginger
  • 1 spring onion
  • 1 star anise
  • minced garlic
  • soy sauce
  • vinegar

INSTRUCTIONS:s

Step 1: heat pork skin and cold water around 5~8 minutes until the pork skin colour change and it can be pierced with a chopstick.

Step 2: cool down for a while. get rid of fat and pig hair. cut into strips.

Step 3: blanch the pigskin and wash for 4 times until the water is clean. put spring onion, ginger and star anise to remove the odour.

Step 4: put the pigskin into boiling water, turn to low heat after it is boiling again, poach for 1.5 hours until the stock becomes thicker.

Step 5: pick out the spring onion, ginger and star anise. cool it in room temperature. then keep in fridge until it is solid and firm.

Step 6: cut into pieces. it is crystal transparent jelly.

Step 7: dip with garlic sauce (the mixture of minced garlic, soy sauce and vinegar) or other sauce you like. DONE❕
