Recipe: how to cook Chinese food, Plum Juice_Plum Soup_summer drink

Plum Juice is a traditional Beijing summer refreshing drink. The main ingredients are smoked plum, hawthorn, osmanthus and rock sugar. It is a healthy summer drink. It is recorded that the history of plum juice can be traced back to the Southern Song Dynasty. In the Qing Dynasty, the imperial kitchen was improved to become the emperor’s summer refreshing drink.

INGREDIENTS:

  • 50g smoked plum
  • 50g dried hawthorn
  • 4g Glycyrrhiza uralensis (Chinese liquorice)
  • 5g dried orange peel
  • 6g dried osmanthus
  • 3.5L water
  • rock sugar

INSTRUCTIONS:

Step 1: clean all ingredients.

Step 2: put all ingredients into water except rock sugar and dried osmanthus. turn to medium-low heat after boiling, simmer for around 50 minutes.

Step 3: put rock sugar and turn off the heat after 5 minutes. add dried osmanthus, then cover with lid for 15 minutes. filter and cool it. DONE❕

keep in the fridge. you also can make it into ice cubes or ice pops.
