Recipe: how to cook Chinese food, Pineapple Cake_shortcake_pastry

Pineapple Cake originated from the Three Kingdoms period in China. It symbolizes thriving and lucky because of its pronunciation in Hokkien. It is used to worship in Taiwan and also served in a wedding. It is very popular and loved by people, which is one of the souvenirs in Taiwan.

INGREDIENTS:

Stuffing:

  • 2000~2300g pineapple
  • 260g rock sugar
  • 210g maltose

Pastry:

  • 245g butter
  • 50g icing sugar
  • 58g whole egg liquid
  • 328g flour
  • 45g milk powder
  • 20g almond powder
  • 15g cheese powder (optional)

INSTRUCTIONS:

Step 1: peel pineapple and wash.

Step 2: shred the pineapple, mash the core with a food processor.

Step 3: squeeze the juice out.

Step 4: about 650g pulp left.

Step 5: heat pulp and rock sugar over high heat, turn to medium heat after the pulp is soft and water comes out. boil it until the water gets less and the colour becomes dark. keep stirring, in case it sticks on the pan.

Step 6: put maltose, stir and heat until it is thick.

Step 7: heat it to amber colour.

Step 8: cool and divide into several balls, 12g each.

Step 9: cut butter into small pieces, add icing powder.

Step 10: beat the butter to smooth and creamy.

Step 11: add room temperature egg liquid and beat.

Step 12: put almond powder and cheese powder.

Step 13: sieve flour and milk powder.

Step 14: mix evenly.

Step 15: divide into 18g dough each.

Step 16: press the dough, put stuffing in the middle.

Step 17: wrap it and make a ball.

Step 18: press the ball into mould.

Step 19: preheat to 180℃, bake it above and below under 170℃.

Step 20: after baking 10 minutes, take out and turn over, bake 10 minutes

Step 21: remove the mould carefully, cool it. DONE❕
