Recipe: how to cook Chinese food, Malatang_spicy¬ spice_simplified hot pot
Malatang originated from Leshan, Sichuan Province and is a traditional snack. Malatang is the predecessor of spicy hot pot, but it can also be said to be a simplified version of hot pot. Not eat spicy can also choose Shenyang old-fashioned Malatang.

spice: you could use hot pot or malatang soup base
- 30g ginger
- 20g garlic
- 40g pickled pepper
- 3g Sichuan pepper
- 40g lard
- 30g broad bean sauce
- 150g hot pot soup base
- 800g chick stock or water
- salt
- white pepper powder
old-fashioned: normally people put some herbs or spices in the soup to poach

any vegetable, meat, soy food and noodle you like, such as:
- vegetable: lotus root, mushroom, potato, green leave vegetables, bean sprout, seaweed, etc
- soy food: tofu, tofu puff, bean curd sheet, etc
- meat: sliced beef, sliced lamb, meatball, fish ball, spam, etc
- noodle: instant noodle, glass noodle
seasoning(optional)
- chilli oil
- cumin
- pepper oil
- vinegar
INSTRUCTIONS:

Step 1: prepare all ingredients.
Step 2: stir-fry ginger and pickled pepper in hot oil.
Step 3: put lard, broad bean sauce, garlic and pepper.
Step 4: add hot pot base.
Step 5: add chicken stock, salt and white pepper powder. after boiling, put all meat, vegetables and noodles.
Step 6: turn off after it is boiling again and cooked. DONE❕
old-fashioned
Step 1: boil water or chicken stock.
Step 2: put all ingredients.
Step 3: turn off after boiling and cook.
Step 4: sprinkle cumin, chilli oil. DONE❕
people usually have it with mantou, naan or kebab. naan+malatang+kebab+peanut milk set is a standard and basic set for some people in the northeast of China.
