Recipe: how to cook Chinese food, Lotus Crisp_snack_dessert_pastry
Lotus Crisp is a famous traditional snack in Hangzhou, Zhejiang, named after the shape. It is a fried pastry. For more healthy, you could use an oven, but it wouldn’t have bloom state.
INGREDIENTS:
- 225g flour
- 65g lard
- 15g sugar
- 55g water
- 90g lotus seed paste (or red bean paste, date paste)
- q.s. red food colouring (or red yeast, red radish juice)
- q.s. oil
INSTRUCTIONS:
Step 1: mix 100g flour with 40g lard evenly.
Step 2: knead dough until it is smooth. stay for 30 minutes, let the lard and flour mix fully, cover with cling wrap.
Step 3: put 125g flour and 25g lard together.
Step 4: pour 15g sugar, red colour and water mixture into flour.
Step 5: stay the kneaded smooth dough for 30 minutes covered with cling wrap.
Step 6: divide the white dough into 15g small balls and the red one into 25g.
Step 7: wrap the white ball with the red dough.
Step 8: cover the ball with cling wrap, in case it turns to dry.
Step 9: make the lotus paste into the 10g ball each.
Step 10: squash the dough and roll it into an oval with a rolling pin. roll it up and cover with cling wrap for 15 minutes.
Step 11: repeat step 10 one more time.
Step 12: stay for 15 minutes covered with cling wrap.
Step 13: press the dough into a round with the thumb, let the ends tilt to the middle. put lotus paste in the middle.
Step 14: wrap and make into a ball.
Step 15: face down the sealed side, cut back into a star shape to just see the filling.
Step 16: heat oil to 150~160℃, fry the lotus ball held with a strainer.
Step 17: pour hot oil onto the ball, let it bloom and get some layers. fry a ball need around 3~4 minutes.
Step 18: drain the oil with a kitchen paper, cool it. DONE❕
