Recipe: how to cook Chinese food, Liang Pi_cold noodle

Liang Pi originates from Shaanxi, which has over 2000 years of history. It is popular in the north of China, and it is one of the common street food in some northeast city. Liang Pi has many flavours, such as spicy, sweet and sour and so on.

INGREDIENTS:

Step 1: add one teaspoon salt into flour.

Step 2: pour appropriate warm water.

Step 3: make into a dough.

Step 4: cover and stay for 20 minutes.

Step 5: pour room temperature water.

Step 6: wash the dough.

Step 7: keep kneading it.

Step 8: pick out the gluten.

Step 9: put the gluten in a container and keep washing it.

Step 10: the gluten.

Step 11: prepare a flat plate.

Step 12: put the plate in a pot and let it float on hot water.

Step 13: stay the flour water for 3 hours, pour out the water.

Step 14: brush oil on the plate.

Step 15: pour a ladle of batter on the plate.

Step 16: cover with lid.

Step 17: it is cooked very fast.

Step 18: the shaped Liang Pi.

Step 19: cut it into strips.

Step 20: steam the gluten for 20 minutes.

Step 21: cool the steamed gluten and dice it.

Step 22: shred the cucumber.

Step 23: blanch the bean sprout.

Step 24: prepare the garlic juice.

Step 25: put Liang Pi, cucumber, bean sprout and gluten in a bowl.

Step 26: put tahini and garlic juice.

Step 27: add soy sauce, vinegar, sugar and chilli oil.

Step 28: mix well. DONE❕
