Recipe: how to cook Chinese food, Hot Pot

Hot pot is a characteristic Chinese cuisine with a long history. There is not the certain origin of the hot pot. According to research, there was a hot pot during the Warring States Period. In the Song Dynasty, hot pot was very common among the folk. In the Yuan Dynasty, hot pot was spread to Mongolia to cook beef and mutton. In the Qing Dynasty, hot pot was not only popular in the folk but also became a famous court dish.

Depending on the region, hot pot varies in form, cooking method, dipping sauce, etc. Nowadays Sichuan hot pot is relatively popular in China and abroad. The winter in the north of China is very cold, so hot pot is more popular. The hot pot has a variety of flavours. In order to satisfy the taste of each person, some hot pot restaurants introduce little hot pots, one person and one pot, not only can choose the soup base that they like, but also clean and hygienic.

The simplest way to cook hot pot is using the hotpot condiment. There are lots of flavours we can choose, such as spicy condiment, tomato condiment, bone soup condiment and so on.

Step 1: heat oil, fry hotpot condiment until the aroma comes out.

Step 2: add some water. when the water is boiling, you can put the meat or vegetables you like.

Step 3: dip some sauce you like. enjoy it.

We also can prepare the condiment at home by ourselves.

Soup Pot Ingredients:

  • 5 bowls water
  • 2 pieces ginger
  • 10–20 goji
  • 2 Shiitake
  • 1 spoon salt
  • Chick stock or bone soup(optional)

Spicy Pot Ingredients:

  • 4–5 dry chilli
  • 5–10 Sichuan pepper
  • 2 star anise
  • 2 pieces ginger
  • 1 spring onion
  • 2 spoons chilli broad bean paste
  • 1 spoon salt
  • 2 spoons soy sauce
  • 2 spoons oil
  • water

INSTRUCTIONS:

Step 1: heat oil. stir star anise, dry chilli and Sichuan pepper until the aroma comes out.

Step 2: add chilli broad bean paste and keep stir-fry until the chilli oil comes out.

Step 3: put spring onion and ginger.

Step 4: pour some water.

Step 5: add salt and soy sauce. turn to low heat after boiling and keep heat it for 5 minutes. the spicy pot is done.

Step 6: put water, chicken stock, ginger, shiitake, goji and salt.

Step 7: cook over low heat for 10 minutes after boiling. the soup pot is done.

Step 8: you could make double flavour pot.

Prepare dipping sauce preferred, such as

1.sesame oil, peanut, mashed garlic, chilli oil, spring onion.

2. cooking wine, soy sauce, sugar, vinegar, water, coriander.

3. peanut butter, soy sauce, mashed garlic, coriander, peanut, salt, sesame oil.

4. sesame paste, mashed garlic, fermented bean curd, chives paste, coriander, sesame oil.

5. chilli oil, pepper powder, tabasco pepper, salt, sesame oil, coriander, spring onion, chilli powder, soy sauce.

6. satay paste, tabasco pepper paste, mashed garlic, Zha Cai.

prepare meat, vegetable you like, such as Chinese cabbage, mushroom, potato, shrimp, meatball, sliced meat, spam, coriander, black fungus, frozen tofu, wax gourd, sweet potato noodles and so on. DONE❕
