Recipe: how to cook Chinese food, Fried Eggplant or Lotus Root Sandwich

Fried Eggplant Sandwich is a traditional famous dish with great look and taste, which belongs to Northeastern Chinese cuisine. It is crispy outside, tender and juicy inside. You could use the lotus root instead of eggplant, which belongs to Hubei cuisine, is a famous dish in the South of China.

INGREDIENTS:

  • 1 eggplant
  • 100g mince
  • 5g starch
  • 15g plain flour
  • 1 egg
  • 30ml water
  • 1g salt
  • 20ml soy sauce
  • 10ml cooking wine
  • a little five spices powder
  • a little ginger and spring onion mince
  • dipping: what sauce or seasoning you prefer, such as ketchup, cumin and chilli powder

INSTRUCTIONS:

Step 1: prepare mince.

Step 2: mix with cooking wine, salt, soy sauce, ginger mince, spring onion mince and starch.

Step 3: cut eggplant into even pieces.

Step 4: spread mince on eggplant.

Step 5: cover with another piece eggplant, press slight and make sure eggplant and mince are stuck together.

Step 6: put an egg into plain flour.

Step 7: add some water, combine them well and make it into a sticky paste.

Step 8: cover eggplant with paste.

Step 9: deep fry. if you don’t like deep-fry, you could pan-fry it.

Step 10: deep-fry or pan-fry to the golden colour on both sides.

Step 11: dip any sauce or seasoning you like. DONE ❕

If you can’t finish it in one time, you could steam it or cook with some sauce when you reheat.
