Recipe: how to cook Chinese food, Dry Beef Chow Fun (dry fried beef rice noodles)

Dry Beef Chow Fun is a classic traditional snack in Guangdong and Hongkong. Invented in the late Qing Dynasty and the early years of the Republic of China.

INGREDIENTS:

  • Rice noodles 200g
  • Bean sprout 50g
  • Beef tenderloin 100g
  • Hotbed chives 100g
  • Soy sauce 30ml
  • Dark soy sauce 15ml
  • Cooking wine 15ml
  • Sugar 5g
  • Salt 1g
  • Cornstarch 15g

INSTRUCTIONS:

Step 1: cut beef tenderloin into pieces. mix salt, 15ml soy sauce, cooking wine and cornstarch well. stay around 15 minutes.

Step 2: wash bean sprout and remove both ends.

Step 3: cut the hotbed chives into 1 inch.

Step 4: soak dry rice noodles in hot water for 3 minutes. Or boil fresh rice noodles for 1 minutes.

Step5: drain the rice noodles and set aside.

Step 6: heat the wok over high heat. add 150g oil and put beef. stir-fry quickly. Then transfer out and set aside.

Step 7: heat the wok over high heat. add oil. put bean sprout, rice noodles and beef. mix with soy sauce, dark soy sauce, sugar and salt. stir-fry quickly until juice is dry and the colour is even. Put hotbed chives and mix well. DONE❕
