Recipe: how to cook Chinese food, Chilli Oil
Chilli Oil is a popular seasoning, which can activate appetite. There are many cooking methods of Chilli oil, the basic way only needs oil and chilli pepper. If making the chilli oil more fragrant and tasty, we could add some spices and herbs when cooking it.
INGREDIENTS:
Method 1
- 60g chilli powder
- 180ml canola oil

Method 2
- 120g dried chilli pepper
- 600g canola oil
- 30g cooked white sesame (optional)
Method 3
- 30g dried chilli pepper
- 3 clove garlic
- 2 piece ginger
- canola oil
- 1 teaspoon Sichuan pepper powder
- 1teaspoon thirteen-spice powder
- 1 teaspoon cumin powder
- soy sauce
- white sesame (optional)
Method 4
- 150g chilli powder
- canola oil
- 1 galangal
- 2 star anise
- 1 cinnamon stick
- 1 amomum tsao-ko
- 15g white sesame (optional)
INSTRUCTIONS:
Method 1
Step 1: prepare all ingredients.
Step 2: heat pot over medium heat until it dry, pour the oil.
Step 3: there will be some bubbles when heating the oil, turn off the heat after the bubbles disappear. the temperature is about 200℃.
Step 4: cool the oil in a bowl without water for 2 minutes.
Step 5: after 1 minute, pour 100℃ oil in ⅓ chilli powder.
Step 6: put another ⅓ chilli powder into the oil and mix well, the temperature is around 90℃.
Step 7: pour all rest chilli powder into oil after 2 minutes, mix sesame evenly. DONE❕
Method 2
Step 1: brush oil on pot, stir-fry chilli pepper over low heat until the chilli peppers turn glossy. turn off the heat after the chilli pepper starting to singe. stir for 1 minute, cool it.
Step 2: make the chilli pepper into powder in a processor, then mix with sesame.
Step 3: heat the oil to 180℃~190℃ without bubbles. turn off the heat and cool it for 3 minutes.
Step 4: pour 2 tablespoon oil into the powder, soak and mix evenly.
Step 5: pour all oil and stir well.
Step 6: cool it. DONE❕
Method 3
Step 1: brush oil on pot, stir chilli pepper over low heat until the colour turns darker and the aroma comes out.
Step 2: cool the chilli pepper.
Step 3: mince garlic and ginger.
Step 4: powder the chilli pepper with a garlic pugging or a processor.
Step 5: put minced garlic and ginger into chilli powder, add sesame, thirteen-spice powder, Sichuan pepper powder and cumin powder.
Step 6: soak all mixture with soy sauce.
Step 7: pour hot oil onto the mixture.
Step 8: cool it. DONE❕
Method 4
Step 1: prepare ingredients.
Step 2: heat oil and stir with a ladle until there is no smoke. turn off the heat.
Step 3: pour the oil onto spices, pick out spices until the oil cools to 220℃~240℃.
Step 4: put sesame and 1 spoon chilli powder, keep stirring in case of burnt. add another 1 spoon chilli powder and stir until putting all chilli powder.
Step 5: keep stirring until there is no bubble. cool it. DONE❕
