Recipe: how to cook Chinese food, boiled beef_Poached Beef in Chilli Oil
Poached Beef in Chilli Oil is a classic traditional dish, belonging to Sichuan cuisine.
INGREDIENTS:
- 500g beef tenderloin
- 250g asparagus lettuce
- 250g bean sprout
- 1 tablespoon broad bean paste
- 20g chilli pepper powder
- 10g Sichuan pepper powder
- 1 ginger
- 5 cloves garlic
- 4–5 chilli pepper (optional)
- 1 egg
- 20g starch and water
- 50g oil (canola oil preferably)
- salt
- coriander
- sesame (optional)
INSTRUCTIONS:
Step 1: slice beef into 2mm thick, peel and cut asparagus lettuce, and wash bean sprout.
Step 2: cut ginger, garlic and chilli pepper. prepare broad bean paste.
Step 3: mix beef with salt, egg white and starch.
Step 4: heat oil to150 °C. stir broad bean paste, ginger, garlic and chilli pepper.
Step 5: pour some water. turn to low heat after boiling. put sliced beef one by one. poach over low heat. after the beef cooked, pour some starch and water. stir evenly. turn off the heat after boiling again.
Step 6: put the asparagus lettuce and bean sprout in hot water with lid covered for around 3 minutes.
Step 7: pour beef and sauce on the vegetables. sprinkle chilli pepper, Sichuan pepper and sesame.
Step 8: pour some hot oil on it.
Step 9: put some coriander. DONE❕
