Recipe: how to cook Chinese food, Black Sesame Soup_dessert
Black Sesame Soup is a popular dessert. It has two main different cooking method, the traditional one and the powder one. The traditional method can serve fresh sesame soup and it has a smoother taste than the powder method, meanwhile, the powder one is very easy to prepare and keep easily, which you could have it anytime you want.
INGREDIENTS:
Traditional Method
- 250g black sesame
- 1300ml water
- 150g glutinous rice
- q.s. rock sugar
- 10 Chinese date (optional)
Powder method
- 250g black sesame
- 125g glutinous rice flour
- 125g sugar
INSTRUCTIONS:
Traditional Method
Step 1: prepare ingredients.
Step 2: wash the glutinous rice and soak in cold water for 1.5 hours.
Step 3: stir-fry the sesame.
Step 4: wash and pit Chinese date, cut into small pieces.
Step 5: grind sesame, glutinous rice, date and 900ml water with a processor in high speed.
Step 6: sieve the paste.
Step 7: keep the filtered sesame water.
Step 8: blend 400ml water and rest mixture in the processor again.
Step 9: repeat step 8 until the mixture is dried.
Step 10: heat the sesame water and rock sugar over medium heat and keep stirring until the soup becomes thick.
Step 11: serve out.
Step 12: decorate as you like. DONE❕
Powder Method
Step 1: stir-fry the sesame.
Step 2: ground in a processor.
Step 3: stir-fry the glutinous rice flour over low heat to light yellow colour.
Step 4: put the sesame powder, glutinous rice powder and sugar together as the 2:1:1 ratio.
Step 5: mix evenly.
Step 6: brew the powder with hot water. keep the powder in a dry container. DONE❕
