Recipe: how to cook homemade Chinese food, Peking Duck

When it comes to Chinese food, Peking Duck will pass through most people’s mind firstly. Peking Duck is a famous Chinese food in the world. It originates from the Northern and Southern Dynasties(420–589). It was imperial cuisine in that time. People roast high-quality pekin duck with fruitwood. Red colour, fleshy fat but not greasy, crisp outside, tender inside. Cook must control the fire well. The perfect cutting time is in 2.5 minutes. Quanjude is one of the most popular restaurants.

How can we cook the complex technical Peking Duck at home? As long as you have an oven, you will have a delicious one.

INGREDIENTS:

  • 1 duck
  • 2 spoons honey
  • 1 spoon cooking wine
  • 1 spoon vinegar or lemon juice
  • 1 spoon spiced salt (Sichuan pepper mix with salt)
  • 1 apple
  • 1 slice toast
  • ginger
  • 4 star anise
  • 270g flour
  • 2g salt
  • cucumber
  • spring onion
  • sweet soybean paste

INSTRUCTIONS:

Step 1: clean duck. pour hot water all over the duck 4 times. keep it in a cool and dry place.

Step 2: mix honey, vinegar, cooking wine and water well. spread spiced salt inside the duck.

Step 3: stand the duck or hang it. spread the step 2 mixer on whole duck. dry it. you could use a fan to speed drying. spread mixer every one hour.

Step 4: brush around 5 to 7 times, the duck skin turns red and tight. keep drying it for one daytime.

Step 5: prepare the stuffing ingredients. cut the apple and ginger.

Step 6: toast absorbs some water, put it and step 5 inside of the duck.

Step 7: seal with toothpicks or sew with thread.

Step 8: wrap legs and wings with foil, in case they are burnt. brush the mixer water again and put the duck in the oven. 160℃, 2 hours, roast the skin to brown colour.

Step 9: meanwhile, mix the flour and salt, make a dough.

Step 10: divide into small doughs and brush oil on one side.

Step 11: put two dough together with the oil side towards inside.

Step 12: roll it to wrap as thin as possible.

Step 13: brush oil on the pan, bake the wrap under low heat with lid covered.

Step 14: cook each wrap on both sides lightly.

Step 15: open each wrap into two wraps from the middle. steam for 10 minutes over high heat. the wraps will be soft.

Step 16: after 2 hours, the duck has been roasted well.

Step 17: shred the cucumber and spring onion. slice the duck.

Step 18: wrap duck, cucumber, spring onion and sweet soybean paste. DONE❕
